1/2 cup BACARDI Gold rum
2 cups fresh orange juice
Zest from two oranges
2 tbs. chopped mint
Curry powder
Chopped cilantro
Minced garlic
1/4 cup soy sauce
1 whole chicken, cut into pieces
Combine all ingredients in a shallow baking dish. Place chicken in marinade overnight. Grill chicken, basting with marinade until done.
